Nutritious and delicious high-protein banana bread

The words “healthy” and “dessert” don’t usually show up in the same sentence — but trust us, you’re going to love this tasty, protein-rich banana bread.

March is nutrition month and to celebrate we’re sharing a favourite recipe from Michael Greenberg, Daily Bread’s Food Services Manager. It’s a smart way to use up ripe bananas, and it comes together quickly with simple ingredients you may already have at home. With whole wheat flour, Greek yogurt, and egg, it’s a satisfying option for breakfast, a snack, or a “just one more slice” dessert.

Michael’s Protein-Rich Banana Bread

Ingredients

  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 3 bananas (ripe)
  • ¼ cup maple syrup (or honey)
  • 1 tbsp vanilla
  • 1 tbsp olive oil (light tasting preferred)
  • 1 large egg
  • ½ cup high-protein non-fat Greek yogurt
  • 1 tbsp milk
  • ½ cup chocolate chips (optional)

Directions

  1. Preheat oven to 350°F. Spray a loaf pan with nonstick cooking spray and set aside.
  2. In a mixing bowl, combine the flour and baking soda.
  3. In a separate bowl, mix the bananas, maple syrup, vanilla, olive oil, milk, and yogurt until smooth. Fold in the dry ingredients, then mix in raisins (if using).
  4. Pour batter into the loaf pan and bake 20–30 minutes, until fully cooked. Check with a toothpick — it should come out clean.
  5. Cool slightly and serve warm. Store in the fridge, or freeze to enjoy later.
