Five-Spice Chicken Skewers with Peach Salsa 

Ingredients 

For the chicken skewers 

  • 500 g chicken breast, cubed 
  • 1/3 cup soy sauce 
  • 2 tbsp rice wine vinegar 
  • 1 tbsp honey 
  • 1 tbsp sesame oil 
  • 1 tbsp garlic, chopped 
  • 1 tbsp ginger, chopped 
  • 1 tsp Chinese five-spice powder 
  • Soaked wooden skewers 

For the peach salsa 

  • 1 cup peaches, chopped 
  • 1 bell pepper, thinly sliced or finely chopped 
  • 1/3 cup cilantro, chopped 
  • 1 tbsp rice vinegar 
  • 1 tsp sesame oil 

Instructions 

  1. In a mixing bowl, combine the soy sauce, rice wine vinegar, honey, sesame oil, garlic, ginger and Chinese five-spice powder. Add the cubed chicken and mix until well coated. 
  2. Thread the chicken onto soaked wooden skewers. 
  3. In a separate bowl, combine the chopped peaches, cilantro, rice vinegar and sesame oil. Mix well and set aside. 
  4. Grill the chicken skewers until the chicken is cooked through and reaches an internal temperature of 165°F. 
  5. Serve the chicken skewers with the peach salsa on the side.
